Start by breaking the egg into a bowl, adding the sweetener (or honey or syrup) and whisking the ingredients well.
Then add the pinch of salt, the peeled and grated apple, as well as the yogurt, and mix well with a spatula.
Sift and add the flour previously mixed with the yeast, then mix until you obtain a smooth and homogeneous mixture.
Finally, pour a drizzle of oil into a non-stick frying pan, add a few spoonfuls of batter at a time (depending on the capacity of your pan), shape them into a round shape typical of frittatas (or pancakes), and cook on both sides until golden brown. Repeat this process until all the batter is used up.
Once ready, serve them as is or accompany them with a spoonful of light jam, protein spread, fresh fruit or simply yogurt!
