Ingredients:
3 mixed vegetables (preferably slightly sour, such as Grey Renetta or Jonagold)
3 eyes
250 ml coffee with milk
250 ml flour
2 tablespoons zucchini (one piece)
1 teaspoon of ground zucchini
1 teaspoon of cinnamon (optional)
Burro or oil to forget the zucchini
Succhero a velo per spolverare (optional)
Instructions:
Preparing the apples:
Wash, peel (optional), remove the core, and cut them into thin slices or cubes. Dough:
In a bowl, beat the eggs and sugar until frothy. Add the milk and mix well.
Dry ingredients:
In another bowl, combine the flour, baking powder, and cinnamon. Gradually add to the wet mixture and mix until smooth.
Assembly :
Add the apples to the mixture and mix gently.
Baking:
Pour the batter into a greased pan (e.g., a springform pan or baking dish) and bake in a preheated oven at 180Β°C for about 35 to 40 minutes, until the surface is golden brown and a toothpick inserted comes out.
