Growing up in the Midwest, casseroles were a staple at every family gathering, and this one brings a fun twist with its taco flavors. It’s perfect for those evenings when you crave something comforting yet quick to prepare. With just five ingredients, it’s a lifesaver for anyone juggling a hectic schedule but still wanting to put a homemade meal on the table.
This taco beef casserole pairs wonderfully with a simple side salad or some steamed vegetables to balance out the richness. You can also serve it with a side of tortilla chips for a bit of crunch, or even some guacamole and salsa for extra flavor. If you’re feeling indulgent, a dollop of sour cream on top is always a hit.
Ingredients
1 pound ground beef
1 packet taco seasoning
1 cup salsa
1 cup shredded cheddar cheese
2 cups crushed tortilla chips
Directions
Preheat your oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess fat.
Stir in the taco seasoning and salsa, and let it simmer for about 5 minutes to let the flavors meld together.
Spread the crushed tortilla chips evenly in the bottom of a 9×13 inch baking dish.
Pour the beef mixture over the chips, spreading it out evenly.
Sprinkle the shredded cheddar cheese over the top.
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
Let it cool for a few minutes before serving.
Variations & Tips
For a bit of extra nutrition, you can add a can of drained black beans or corn to the beef mixture. If you like it spicy, consider adding some chopped jalapeños or using a spicier salsa. For a vegetarian version, substitute the ground beef with a plant-based meat alternative or more beans.
