Ingredients
For the chicken:
1 whole chicken (about 2–2.2 kg), cut into 8 pieces
2 tablespoons olive oil
Salt and black pepper to taste
Spice mix:
1 teaspoon ground turmeric
1 teaspoon ground ginger
1 teaspoon paprika
½ teaspoon ground cumin
½ teaspoon cinnamon (optional but traditional)
1 teaspoon ground coriander
2 cloves garlic, minced
For cooking:
2 large onions, finely sliced
1 preserved lemon (or zest of 1 lemon + juice of 1)
1 cup green or mixed olives
1 cup chicken stock or water
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh cilantro (coentro)
Optional additions:
1 cup diced tomatoes (for a saucier version)
1 tablespoon honey (for subtle sweetness)
