Ingredients:
For the Jerk Chicken:
1.5 lbs (680g) chicken thighs or breasts
2 tbsp olive oil
2 tbsp soy sauce
1 tbsp brown sugar
2 garlic cloves, minced
1 tsp ground allspice
1 tsp dried thyme
1/2 tsp cinnamon
1/2 tsp nutmeg
1–2 habanero or Scotch bonnet peppers, minced (adjust to taste)
1/2 tsp black pepper
Juice of 1 lime
For the Pineapple Salsa:
1 cup fresh pineapple, diced
1/2 red bell pepper, diced
1/4 red onion, finely chopped
1 small jalapeño, minced (optional, for heat)
2 tbsp fresh cilantro, chopped
Juice of 1 lime
Salt, to taste
