Potato, Leek, and Chicken Soup

Ingredients:

– 2 tablespoons olive oil
– 1 medium onion, chopped
– 2 leeks, cleaned and sliced (white and light green parts only)
– 2 cloves garlic, minced
– 4 medium potatoes, peeled and diced
– 4 cups chicken broth
– 2 cups cooked chicken, shredded (preferably boneless, skinless)
– 1 teaspoon dried thyme
– 1 bay leaf
– Salt and pepper to taste
– 1 cup heavy cream (optional for creaminess)
– Fresh parsley, chopped (for garnish)
