Ingredients for Slow Cooker Beef Ragu:

Cubed Beef Chuck Roast 2 pounds
Medium Onion (finely chopped) 1
Garlic Cloves (minced) 3
Olive Oil 2 tablespoons
Salt To taste
Black Pepper To taste
Tomato Paste 1/4 cup
Carrot (finely sliced) 1
Celery (stalk) 1
Dry Red Wine 1 cup
Crushed Tomatoes 28 oz
Fresh Thyme Sprigs 3
Beef Broth 1/2 cup (adjust as needed)
Grated Parmesan Cheese For garnish
Bay Leaves 2
Fresh Parsley (chopped) For garnish
Cooked Noodles (optional) As desired
Step-by-Step Instructions:
Prepare the Beef:
Season the cubed beef chuck roast with salt and pepper.
In a skillet over medium-high heat, brown the beef in batches with olive oil. Transfer the browned beef to the slow cooker.
Saute the Vegetables:
In the same skillet, saute the chopped onion, minced garlic, sliced carrot, and celery until softened (about 5 minutes).
Add more olive oil if needed and stir in the tomato paste. Cook for an additional 2 minutes.
Deglaze and Simmer:
Deglaze the skillet with red wine, scraping off any browned bits.
Reduce the wine, then pour the sauce over the beef in the slow cooker.
