Cheesy Zucchini and Ham Muffins

Ingredients

  • All-Purpose Flour: 1½ cups (190 g)
  • Baking Powder: 2 teaspoons
  • Salt: ½ teaspoon
  • Zucchini: 1 medium (about 1 cup), grated and squeezed to remove excess moisture
  • Ham: ½ cup (75 g), diced
  • Cheddar Cheese: 1 cup (100 g), grated
  • Eggs: 2 large
  • Milk: ½ cup (120 ml)
  • Olive Oil ¼ cup (60 ml)
  • Garlic Powder (optional): ¼ teaspoon
  • Black Pepper: To taste

Instructions:

  • Preheat the Oven:
    • Preheat your oven to 180°C (350°F). Grease a 12-cup muffin tin or line it with paper liners.
  • Prepare the Dry Ingredients:
    • In a large bowl, combine the flour, baking powder, salt, garlic powder (if using), and black pepper. Mix well.
  • Mix the Wet Ingredients:
    • In another bowl, whisk together the eggs, milk, and olive oil until well combined.
  • Combine the Batter:
