  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Mushroom and Spinach Filling:

  • 2 tablespoons olive oil
  • 1 lb (450g) mushrooms, sliced (button or cremini work well)
  • 4 cups fresh spinach (or 10 oz frozen spinach, drained)
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the Ricotta Mixture:

  • 1 1/2 cups ricotta cheese
  • 1 egg
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Other Ingredients:

  • 9-12 lasagna noodles (depending on your dish size, preferably no-boil noodles)
  • 3 cups shredded mozzarella cheese
  • 2 cups marinara or tomato sauce (optional for layering)
