- 1 cup pecans
Instructions:
Step 1: Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking tray.
Step 2: Prepare the Shortbread Layer
- In a medium mixing bowl, combine the flour and 3/4 cup brown sugar.
- Using a pastry cutter or fork, cut in the softened butter until the mixture resembles coarse crumbs.
- Stir in 1/2 cup chopped pecans.
- Press the mixture evenly into the bottom of the prepared baking tray.
- Bake for 10 minutes, then remove from the oven and let it cool slightly for about 10–15 minutes.
Step 3: Prepare the Cheesecake Layer
- In a large bowl, beat the softened cream cheese and sugar until smooth.
- Gradually add the milk and vanilla extract, beating until fully combined.
- Spread the cheesecake mixture evenly over the cooled shortbread layer.
Step 4: Prepare the Pecan Pie Layer
- In another bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, salt, and vanilla extract until smooth.
- Stir in 1 cup of pecans.
- Gently pour the pecan pie mixture over the cheesecake layer, spreading it evenly.
Step 5: Bake and Cool
- Bake the assembled layers at 350°F for 35–40 minutes, or until the pecan pie layer is set and golden brown.
- Remove from the oven and let it cool completely in the pan before cutting into squares.
Tips for Success
- Use Room Temperature Ingredients: This ensures smooth blending, especially for the cheesecake layer.
- Don’t Rush Cooling: Let the dessert cool completely before slicing to achieve clean layers.
- Customize Your Nuts: For variety, try mixing in walnuts or almonds with the pecans.
These Pecan Cheesecake Squares are a show-stopping dessert that combines the richness of cheesecake with the classic flavors of pecan pie. Perfect for holidays, parties, or anytime you want a sweet indulgence!
