Avocado Baked Eggs
Ingredients
1 ripe avocado
2 large eggs
Salt and pepper to taste
Optional toppings: chopped chives, parsley, red pepper flakes, or shredded cheese
Instructions
Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare the Avocado: Cut the avocado in half and remove the pit. Scoop out a little of the flesh from each half to create a larger hole for the egg. Save the scooped avocado to use as a topping or enjoy on the side.
Place the Avocado Halves: Set the avocado halves in a small baking dish or on a muffin tin so they don’t tip over. You can also stabilize them by trimming a bit off the bottom of each avocado half.
Add the Eggs: Carefully crack an egg into each avocado half. The yolk may not fit perfectly, so you can let some of the egg whites spill over if needed. Season with salt and pepper.
Bake: Place the avocados in the oven and bake for 12-15 minutes or until the eggs are cooked to your desired doneness.
Top and Serve: Remove from the oven and sprinkle with your choice of toppings like chopped chives, parsley, red pepper flakes, or a little shredded cheese.
