100 g of almond powder
100g caster sugar
50 g softened butter
2 eggs + 1 yolk (for gilding)
1 tbsp. tablespoon of crème fraîche
1 tbsp. teaspoon bitter almond extract (optional)

Preparation
Preheat the oven to 200°C (390°F).
Mix the almond powder, sugar, softened butter and eggs in a salad bowl. Add the crème fraîche and bitter almond extract (optional). Mix until you obtain a smooth cream.
