2 medium potatoes, peeled and diced
1 celery stalk, chopped
1 bay leaf
4 cups fish stock or vegetable broth
1 cup water (if necessary)
Salt and pepper to taste
Fresh herbs (like parsley, thyme, or dill) for garnish
Optional: 1/2 cup cream or coconut milk for a creamy texture
Optional: 1 tablespoon lemon juice or zest for brightness
Instructions:
Prepare the fish: Cut the fish into bite-sized pieces and set aside.
