Grilled Chicken Salad Recipe

Ingredients:

For the Salad:

2 grilled chicken breasts (diced)

1 cup cherry tomatoes (halved)

1 cup cucumber (sliced)

½ red onion (thinly sliced)

½ cup sweet corn

1 avocado (diced)

2 cups romaine lettuce or mixed greens (chopped)

¼ cup fresh parsley or cilantro (chopped)

For the Dressing:

3 tbsp olive oil

1 tbsp lemon juice

1 tsp honey

1 tsp Dijon mustard

1 clove garlic (minced)

Salt & black pepper to taste
