Ingredients
For the Cookie Dough:
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, softened
3/4 cup granulated sugar
1/2 cup light brown sugar, packed
1 large egg
1 teaspoon vanilla extract
For the Cheesecake Filling:
4 ounces cream cheese, softened
1/4 cup powdered sugar
1/2 teaspoon vanilla extract
For the Blueberry Swirl:
1/2 cup blueberry jam (store-bought or homemade)
Instructions
Step 1: Prepare the Dough
In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2–3 minutes.
Add the egg and vanilla extract, mixing until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated. Cover and refrigerate the dough for 30 minutes.
