- 2 cups cooked brown rice
- 1 cup black beans (drained and rinsed)
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup diced tomatoes (canned or fresh)
- 1/2 cup onion, finely chopped
- 1/2 cup bell peppers, diced (any color)
- 1 cup shredded cheddar cheese (or Mexican blend cheese)
- 1/2 cup salsa (mild, medium, or spicy, based on your preference)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 1/4 cup fresh cilantro, chopped (optional, for garnish)
Instructions:
Step 1: Preheat the Oven
- Preheat your oven to 375°F (190°C)and lightly grease a baking dish with olive oil or cooking spray.
Step 2: Prepare the Rice Mixture
- In a large mixing bowl, combine the cooked brown rice, black beans, corn, diced tomatoes, onions, and bell peppers.
- Add the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine.
