Ingredients:

  • 2 cups cooked brown rice
  • 1 cup black beans (drained and rinsed)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 cup onion, finely chopped
  • 1/2 cup bell peppers, diced (any color)
  • 1 cup shredded cheddar cheese (or Mexican blend cheese)
  • 1/2 cup salsa (mild, medium, or spicy, based on your preference)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1/4 cup fresh cilantro, chopped (optional, for garnish)

Instructions:

Step 1: Preheat the Oven

  • Preheat your oven to 375°F (190°C)and lightly grease a baking dish with olive oil or cooking spray.

Step 2: Prepare the Rice Mixture

  1. In a large mixing bowl, combine the cooked brown riceblack beanscorndiced tomatoesonions, and bell peppers.
  2. Add the chili powdercuminsmoked paprikasalt, and pepper. Mix well to combine.

Step 3: Assemble the Casserole
