Piña Colada Pound Cake

Ingredients:

  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup canned crushed pineapple, drained
  • ½ cup sweetened shredded coconut
  • ½ cup coconut milk (or coconut cream for extra richness)
  • ¼ cup pineapple juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract (optional)
  • 2 tablespoons dark or light rum (optional, for classic piña colada flavor)

For the Glaze (optional):

  • 1 cup powdered sugar
  • 2–3 tablespoons pineapple juice or coconut milk
  • Toasted coconut flakes, for garnish
