This moist, flavorful carrot cake is made with oat flour, natural sweeteners, and creamy Greek yogurt. It’s the perfect guilt-free dessert that doesn’t sacrifice on flavor, texture, or satisfaction.

Ingredients

Dry Ingredients:

  • 1½ cups oat flour (blend oats in a food processor to make flour)

  • 1 tsp ground cinnamon

  • ½ tsp ground nutmeg (optional)

  • 1 tsp baking powder

  • ½ tsp baking soda

  • Pinch of salt

Wet Ingredients:

  • 2 eggs

  • ⅓ cup melted coconut oil (or light olive oil)

  • ⅓ cup honey or pure maple syrup

  • 1 tsp vanilla extract

  • ½ cup unsweetened plain or Greek yogurt

  • 1½ cups finely grated carrot (packed)

Optional Add-ins:

  • ¼ cup chopped walnuts
