A recipe for tender and delicious liver that even those who have never liked it will try.

  1. Fresh liver is soaked in cold water to remove blood and debris.

  2. Dry it with kitchen paper and cut into small pieces.

  3. In a separate bowl, beat the egg, mix it with the salt, sugar, baking soda and crushed garlic.

  4. Add the liver pieces to this mixture and let them marinate for about 2 hours (maybe longer).

  5. In a heated pan, fry the diced onion and set aside.

  6. In the same pan, fry the liver, first rolling each piece in flour.

  7. Fry for 3 minutes on each side, then sprinkle the fried onions on top, cover with a lid and let simmer for another 5 minutes.

  8. Serve with a side dish and a fresh salad.
