- Potatoes: Wash the potatoes thoroughly and chop them into bite-sized pieces. For quicker cooking, you can parboil them for about 5-7 minutes until slightly tender but not fully cooked.
- Sausages: Slice the sausages into rounds or half-moons, depending on your preference.
2. Cook the Potatoes:
- In a non-stick skillet over medium heat, add the chopped potatoes. If you prefer to minimize oil, use a splash of water or vegetable broth instead to prevent sticking. Cook the potatoes until they start to get golden and crisp on the edges, about 10 minutes, stirring occasionally.
3. Add the Sausages:
- Push the potatoes to one side of the skillet and add the sausage slices to the pan. Cook until the sausages are nicely browned and heated through, about 5-7 minutes, stirring occasionally.
4. Add the Eggs:
- Make two small wells in the skillet among the potatoes and sausages. Crack an egg into each well. Season with salt and pepper. Cover the skillet with a lid to allow the eggs to steam cook to your desired doneness. This should take about 3-5 minutes for eggs with runny yolks or a bit longer for fully set eggs.
