  1. Prep the Potatoes: Wash and scrub the baby potatoes well. Pat them dry with a clean towel. If they are larger, cut them in half for even cooking.
  2. Season: Place the potatoes in a bowl. Add olive oil, garlic powder, paprika, rosemary or thyme (if using), salt, and black pepper. Toss until the potatoes are well coated.
  3. Air Fry: Preheat your air fryer to 400°F (200°C) for 3 minutes. Arrange the potatoes in a single layer in the air fryer basket.
  4. Cook: Air fry for 15–20 minutes, shaking the basket halfway through, until the potatoes are golden brown, crispy on the outside, and tender on the inside. Cooking time may vary slightly depending on the size of your potatoes and your air fryer model.
  5. Serve: Transfer to a plate, sprinkle with fresh parsley if desired, and enjoy immediately!
