Preheat the air fryer to 400°F (200°C).
In a large bowl, toss the halved potatoes with 2 tablespoons of olive oil, salt, pepper, and half of the minced garlic. Place the potatoes in the air fryer basket and cook for 10 minutes.
Meanwhile, in the same bowl, toss the steak bites with 1 tablespoon of olive oil, salt, pepper, thyme, rosemary, smoked paprika, and the remaining minced garlic.
After 10 minutes, add the steak bites to the air fryer basket with the potatoes. Cook for an additional 10-12 minutes, shaking the basket halfway through, until the steak is cooked to your desired doneness and the potatoes are crispy.
Transfer the steak bites and potatoes to a serving dish. Drizzle with melted butter and garnish with fresh parsley.
