Prep the Carrots: Wash, peel (if desired), and trim the carrots. Slice them on a diagonal into ½-inch pieces, or leave whole if using young, slender carrots.

Sauté: In a large skillet over medium heat, melt the butter. Add the carrots and sauté for 5–6 minutes, until they begin to soften and develop light golden spots.

Glaze: Drizzle the honey over the carrots and sprinkle with brown sugar. Gently stir to coat evenly.

Simmer: Season with a pinch of salt and pepper. Reduce heat to medium-low, cover, and simmer for 8–12 minutes, stirring occasionally, until the carrots are tender and the glaze has thickened.

Serve: Transfer to a serving dish, garnish with fresh parsley if using, and serve warm.
