What to do:
Bring a skillet to a medium heat.
Rub a little butter on both sides of each sourdough piece.
In the pan, lay two bread slices butter-side down.
On top of the bread in the pan, layer the slices of avocado, mozzarella cheese, and tomatoes. Toss in the salt and pepper.
If desired, garnish with crisp, fresh basil leaves.
Spread butter side up on the remaining bread pieces and arrange them on top.
Toast the bread for three to four minutes on each side, or until it becomes golden and the cheese melts. The
cheese will melt and the sandwich will stay together if you use a spatula to gently press down.
After taking it out of the pan, give it a minute to cool before slicing and serving.
