1. First cut a hole in each apple.
2. Heat the butter in a pan, then add the apples with cinnamon and brown sugar. Cook for 2 minutes over low heat until the sugar melts.
3. Cut two large circles from the puff pastry and place the carved apples in the middle.
4. Cut the ends of the pastry into strips and wrap the apples, overlapping the strips.
5. Brush the puff pastry with beaten egg yolk.
6. Bake in a preheated oven at 190 degrees C for 15 minutes.
7. Garnish with a scoop of ice cream and whipped cream if desired.
