Preparation:
Preheat the oven: Preheat your oven to 300°F (150°C).
Prepare the ribs: Remove the membrane from the back of the ribs. Rub the ribs with olive oil. In a small bowl, mix brown sugar, paprika, garlic powder, onion powder, black pepper, salt, chili powder, and apple cider vinegar (if using). Generously coat both sides of the ribs with the spice mix.
Bake the ribs: Place the ribs on a baking sheet lined with aluminum foil. Cover with another piece of foil and bake for 2.5-3 hours, until the ribs are tender.
Apply BBQ sauce: Remove the ribs from the oven, discard the top layer of foil, and brush the ribs with BBQ sauce on both sides.
Caramelize the sauce: Return the ribs to the oven, uncovered, and bake for an additional 20-30 minutes, basting with more BBQ sauce halfway through, until the sauce is bubbly and caramelized.
Serve: Let the ribs rest for a few minutes before slicing and serving.
