This recipe is so easy! Follow these simple steps:

  1. Mix the Seasonings:
    • In a small dish, mix together your herbs and spices.
  2. Marinate the Chicken:
    • Add the chicken legs to a large, gallon-sized zip-top bag and add the olive oil. Seal the bag and roll the legs around for a minute to distribute the oil evenly over all the chicken.
    • Open the bag, pour in the seasonings, close the bag, and shake it well. Take a minute or so to massage the chicken and distribute the seasoning evenly.
  3. Prepare the Oven:
    • Set aside the seasoned chicken for a minute and preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil and spray it well with non-stick cooking spray. This is important, as the chicken will stick without it.
  4. Bake the Chicken:
    • Take the chicken out of the bag and place it on the foil-lined baking sheet. Put it into the preheated oven and bake for 40 minutes.
    • After 40 minutes, the chicken will have a beautiful golden color, and the inside will be at least 165°F (74°C) when checked with an instant-read thermometer. In fact, it will probably be closer to 185-195°F (85-90°C), which is exactly what we want!
