Melt the butter in a small skillet over medium heat and add the minced garlic. Let cook for 1-2 minutes until garlic is fragrant.
Add the juice and zest of lemon to the skillet and the olive oil. Mix it up well.
Pour this sauce over the cod fillets and add some fresh thyme sprouts.
Bake for 15 to 20 minutes, until fish is fully cooked.
Serve with rice or steamed vegetables for a light meal.
