Preparation
Marinate the Chicken:
Place chicken thighs in a large bowl or a resealable plastic bag.
Prepare the Marinade:
In a small bowl, mix together lemon juice, olive oil, minced garlic, Dijon mustard, oregano, thyme, dill, paprika, salt, and black pepper until well combined.
Marinate the Chicken:
Pour the marinade over the chicken thighs. Cover the bowl with plastic wrap or seal the bag, and refrigerate for 2-6 hours to allow the flavors to meld.
Bake the Chicken:
Preheat your oven to 350°F (175°C). Arrange the marinated chicken in a large baking dish and pour any remaining marinade over the top.
