Preheat oven to 375°F (190°C).
Season the chicken with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear the chicken for 2-3 minutes per side until golden. Remove from heat.
Make the sauce:
In a saucepan, combine mandarin juice, soy sauce, honey, vinegar, garlic, and ginger. Bring to a gentle simmer.
Mix the cornstarch and water to make a slurry. Stir it into the sauce and cook for another 2–3 minutes until thickened. Remove from heat.
Bake the chicken:
Place the seared chicken in a baking dish.
Pour the mandarin sauce over the chicken.
Bake uncovered for 25–30 minutes or until the internal temperature reaches 165°F (74°C).
Garnish and serve:
Top with mandarin segments, green onions, and sesame seeds if desired.
Serve with jasmine rice, quinoa, or steamed vegetables.
