Ingredients:
4 tortillas (8 inch)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
3 cups roughly chopped spinach
8 ounces sliced mushrooms
Olive oil (optional, enough to lightly coat the tortillas)
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Sauté Mushrooms: In a large skillet, sauté the mushrooms until they are golden brown and tender.
Assemble Quesadillas: Spread each tortilla with a layer of mozzarella and cheddar cheese. Top with the sautéed mushrooms and spinach.
Fold and Place on Baking Sheet: Fold the tortillas in half, creating a half-moon shape. Place them on a baking sheet.
Brush with Oil (Optional): If desired, lightly brush the tops of the quesadillas with olive oil.
Bake: Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the tortillas are golden brown.
Serve: Serve immediately with your favorite salsa, sour cream, or guacamole.
Tips:
For a spicier kick, add a pinch of red pepper flakes to the mushroom mixture.
If you prefer a crispier quesadilla, you can broil them for a few minutes after baking.
