INSTRUCTIONS:
Prep the Mushrooms: If you want to speed up the cooking process, you can microwave the mushrooms for a few minutes to soften them.
Assemble the Quesadillas:
Lightly brush one side of each tortilla with olive oil (optional).
Layer half of a tortilla with cheese, spinach, mushrooms, and then more cheese.
Fold the tortilla in half over the filling.
Bake:
Place the quesadillas on a baking sheet and bake in a preheated oven at 400°F (200°C) for 6-8 minutes per side, or until the cheese is melted and the tortillas are golden brown.
Enjoy! Serve these delicious quesadillas with your favorite dipping sauce, such as salsa or guacamole.
