Preheat oven to 375°F (190°C).
In a bowl, mix chicken, BBQ sauce, garlic powder, salt, pepper, rice, and corn if using.
Stir in 1 cup of cheddar cheese.
Stuff the pepper halves with the chicken mixture and place in a baking dish.
Sprinkle remaining cheese on top of each stuffed pepper.
Cover with foil and bake for 25 minutes. Remove foil and bake another 10 to 15 minutes until cheese is bubbly and peppers are tender.
Garnish with parsley or green onions if desired and serve warm.
