Toss the cut potatoes in vegetable oil and spread them out in a single layer on a baking sheet.
Season with salt and bake for 30-35 minutes, flipping halfway through, until golden and crispy.
Cook the Beef and Onions:

While the fries bake, heat olive oil in a large skillet or Dutch oven over medium-high heat.
Add the beef strips and sear on all sides until browned, about 4-5 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add the sliced onions and cook, stirring occasionally, until softened and caramelized, about 10-12 minutes.
Stir in the garlic and cook for an additional minute.
