For the Enchiladas:
8 small flour or corn tortillas

1½ cups shredded cheddar or Mexican blend cheese (divided)

2 cups red enchilada sauce (store-bought or homemade)

Fresh cilantro, for garnish (optional)

Sour cream or avocado, for serving (optional)
