Ingredients
1 cup of coconut flour
1/4 teaspoon of salt
1/4 cup of unsalted butter, melted
4 large eggs
1 tablespoon of erythritol (optional, for a sweet pie crust)
Directions
1. Preheat your oven to 400 degrees Fahrenheit (204 degrees Celsius).
2. In a large mixing bowl, combine the coconut flour and salt, stirring until well mixed.
3. Add the melted butter and eggs to the dry ingredients, mixing well until a dough forms. If making a sweet crust, mix in the erythritol.
4. Press the dough into a 9-inch pie pan, spreading it evenly on the bottom and up the sides.
5. Poke several holes in the crust with a fork to prevent bubbling.
6. Bake in the preheated oven for 8-10 minutes, or until the edges begin to turn golden brown.
7. Remove from the oven and let cool before filling with your chosen pie filling.
