Instructions:

Marinate the Chicken
In a bowl, toss the chicken slices with cornstarch, salt, and black pepper. Set aside for 10 minutes. -
Stir-Fry
Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the chicken and stir-fry until golden brown and almost cooked through. Remove and set aside. -
Sauté Veggies
In the same skillet, add another tablespoon of oil. Sauté onions and garlic until fragrant. Add mushrooms and cook until they release their moisture and turn golden.Advertisement: -
Combine & Sauce
Return the chicken to the skillet. Add soy sauce, oyster sauce, sugar, and water. Stir-fry everything together for another 2–3 minutes until sauce thickens and coats the chicken well. -
Serve Hot
Garnish with green onions if desired and serve immediately with rice, noodles, or over a warm grain bowl.
