Getting flawless hard-boiled eggs is not difficult, but it is important to pay attention to several factors.
First, choose organic eggs, from free-range hens; Cook them according to their size and the degree of softness of the yolk you want to obtain: from 7 to 8-9 minutes for medium eggs, up to 10 for larger ones.
After the necessary time in boiling water, immediately transfer them to a bowl full of cold water and ice: in this way, you will stop cooking and they will cool down faster. You will thus be able to easily remove the shell, avoiding removing the egg white as well.
The vinegar, in addition to flavoring the egg, makes the egg white more compact and ensures that it does not come out even if a hole forms or cracks the shell. In addition, it reacts with the calcium carbonate with which the latter is composed, causing it to break down and thus helping us in the removal operation.
To make the yolk stay perfectly in the center, rotate the eggs on the bottom of the saucepan, creating a vortex: in this way, it will stabilize and remain still.
Boiled eggs can be stored by different methods: in the fridge, with the shell still on, closed in an airtight container for 5-7 days; if shelled, they should instead be put in water for up to 2 days. In addition, you can pickle them for 3 months.
