Bake the Cupcakes:

Fill each liner about 2/3 full and bake according to package instructions.
Allow cupcakes to cool completely.
Prepare the Filling:

In a bowl, whisk together the instant vanilla pudding mix and cold milk until smooth.
Let the mixture set for about 5 minutes until thickened.
Fill the Cupcakes:

Using a small knife, cut a hole in the center of each cupcake (about an inch deep).
Fill the holes with the prepared vanilla pudding.
Make the Ganache Topping:

In a small saucepan, heat the heavy cream until it begins to simmer.
Pour the hot cream over the chocolate chips in a bowl and let sit for 2 minutes.
