Instructions
Place the lamb shanks in an ovenproof dish or casserole.
Pour the bottle of salad dressing over the lamb.
Add the lemon quarters, onion, garlic halves, oregano, and rosemary.
Season with salt and pepper.
Cover the dish with a lid or tightly with foil.
Roast in the oven at 320°F (160°C) for 3 to 3½ hours, or until the meat is extremely tender.
Serve warm with mashed potatoes or crusty bread to soak up the flavorful juices.
