Brisiliense Muffins (Bolo de Milho)

Ingredients:

  • Wet Ingredients:
    • 2 cups of whole or partially dried corn kernels
    • 1 cup of milk
    • 1 cup of coconut milk
    • 1 cup of granulated sugar
    • ½ cup of vegetable oil
    • 3 large eggs
  • Dry Ingredients:
    • 1 cup of finely ground cornmeal
    • 1 cup of all-purpose flour
    • 1 tablespoon of baking powder
    • ½ teaspoon of salt
    • 1 cup of shredded coconut (optional, for added texture and flavor)
  • Optional:
    • 1 tablespoon of chocolate chips or chopped chocolate for added texture and flavor
    • Butter for greasing the muffin tin
