Step 1: Preheat & Mix
Preheat your oven to 350°F (175°C).
In a medium bowl, use a hand mixer to combine:
Brownie mix
Vanilla extract
Cornstarch
Melted butter
Softened cream cheese
Egg
The dough will be sticky.
Step 2: Shape & Bake
Scoop dough onto an ungreased cookie sheet and shape each scoop into a round cookie.
Bake for 12 minutes.
Step 3: Make the Peanut Butter Filling
While the cookies bake, mix the powdered sugar and peanut butter in a bowl.
Form into 1-inch balls, one for each cookie. Set aside.
Step 4: Press & Cool
Right after baking, press a peanut butter ball lightly into the center of each hot cookie.
The peanut butter will soften slightly.
Cool cookies for 5 minutes, then transfer to a wire rack.
Step 5: Melt & Top with Chocolate
Melt the chocolate chips in a microwave-safe bowl, heating in 30-second increments and stirring between each.
Spoon ½ tablespoon of melted chocolate on top of each cookie, covering the peanut butter ball.
Let the chocolate set.

Store cookies in an airtight container at room temperature.
