Before you begin, make sure your oven is preheated at 400 degrees Fahrenheit.
To make classic French fries, start by slicing russet potatoes into long, thin strips.
Toss the sliced potatoes with olive oil, minced garlic, Italian seasoning, salt, and pepper in a large mixing basin. Season to taste. Make sure the fries are covered evenly by tossing them well.
