Instructions:

1. Prepare the Mashed Potatoes:

  1. Boil the Potatoes: Place the peeled and chopped potatoes in a pot of salted boiling water. Cook for 15-20 minutes or until fork-tender.

  2. Drain & Mash: Drain the water, then return the potatoes to the pot. Mash them using a potato masher or fork until smooth.

  3. Add Creaminess: Stir in the butter, milk (or cream), salt, pepper, and grated cheese (if using). Mix until creamy and well combined. Cover and set aside to keep warm.

2. Cook the Butter Garlic Lobster:

  1. Prepare the Lobster Tails: Using kitchen scissors, carefully cut the top shell of each lobster tail lengthwise. Gently lift the meat, keeping it attached at the base, and place it on top of the shell (this helps it cook evenly).

  2. Make the Garlic Butter Sauce: In a pan over medium heat, melt the butter. Add the minced garlic and sauté for 30 seconds until fragrant.

  3. Season the Sauce: Stir in the mustard, honey (if using), lemon juice, salt, and black pepper. Cook for another 1 minute, then remove half of the sauce for later.

3. Serve:

  1. Spoon a generous portion of mashed potatoes onto a plate.

  2. Place the lobster tails beside the potatoes and drizzle with the remaining garlic butter sauce.

  3. Garnish with chopped parsley and serve immediately.
