👨🍳 Step-by-Step Instructions
Prepare the Mashed Potatoes
In a large pot, add the peeled and chopped potatoes and cover with cold water.
Add a pinch of salt and bring to a boil over medium-high heat.
Reduce heat and simmer for 15–20 minutes, or until the potatoes are fork-tender.
Drain and return potatoes to the pot.
Add heavy cream, butter, and salt, then mash until smooth and creamy.
Cover and set aside while you prepare the pork chops.
2️⃣ Sear the Pork Chops
Pat dry the pork chops with a paper towel and season both sides with salt, pepper, and thyme.
Heat 1 tbsp olive oil in a large skillet over medium-high heat.
Add pork chops and sear for 3–4 minutes per side, or until golden brown.
Remove the pork chops and set them aside on a plate (they will finish cooking in the sauce).
3️⃣ Make the Buttery Garlic Sauce
In the same pan, reduce heat to medium and add 3 tbsp butter.
Stir in the minced garlic and cook for 30 seconds, stirring frequently (don’t let it burn!).
Return the pork chops to the pan, spooning the garlic butter sauce over the top.
Cover and let cook for 3–5 minutes until the pork reaches 145°F (63°C) internally.
