Method of Preparation
Cook the Pasta
Start by boiling a large pot of salted water. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Chicken
Heat olive oil and butter in a large skillet over medium-high heat.
Add the chicken pieces, and season with Cajun seasoning, smoked paprika, salt, and pepper.
Cook for 5–7 minutes, flipping occasionally, until the chicken is golden brown and fully cooked.
Add the minced garlic and cook for another 30 seconds until fragrant.
Remove the chicken from the skillet and set aside.
Make the Creamy Sauce
In the same skillet, melt 1 tablespoon butter.
Pour in the chicken broth and heavy cream, and stir to combine.
Bring to a light simmer and cook for 2–3 minutes to thicken slightly.
Stir in the grated Parmesan cheese and continue stirring until smooth and creamy.
Season with salt, pepper, and red pepper flakes if desired.
Combine and Serve
Add the cooked penne pasta to the sauce and stir to coat evenly.
Return the cooked chicken to the pan and stir to combine everything.
Garnish with fresh parsley and extra Parmesan cheese, then serve hot.
