- Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
- Cream the butter and sugar together in a large bowl until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract and citrus zest if using.
- Sift the flour, baking powder, and salt together. Gradually fold the dry ingredients into the wet mixture, alternating with the milk or yogurt until you get a smooth batter.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Dust with powdered sugar or glaze if desired. Slice and enjoy!
