Instructions:
1. Preheat your oven to 350°F (175°C) and grease two 22 cm round cake pans.
2. In a large bowl, mix flour, sugar, baking powder, baking soda, cinnamon, and salt.
3. In another bowl, whisk together oil, eggs, grated carrots, crushed pineapple, and vanilla extract.
4. Combine the wet and dry ingredients. Stir in chopped walnuts.
5. Divide the batter evenly into the prepared pans.
6. Bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes, then transfer to wire racks to cool completely.
Notes:
Feel free to add raisins or swap walnuts for pecans for a different texture.
