  1. Prepare the Cauliflower:
    • Boil a pot of water with 1 teaspoon salt. Add the chopped cauliflower and cook for 5-7 minutes until tender. Drain and let cool slightly.
  2. Prepare the Patty Mixture:
    • Mash the cauliflower until smooth.
    • In a large bowl, combine the mashed cauliflower, breadcrumbs, grated cheddar cheese, ginger chili paste, chopped jalapeΓ±o, chili flakes, oregano, black pepper, corn flour, 1/2 teaspoon salt, and chopped coriander. Mix until well combined.
  3. Shape and Cook the Patties:
    • Shape the mixture into patties and coat each with additional breadcrumbs.
    • Heat oil in a non-stick frying pan over medium heat. Cook the patties for 3-4 minutes on each side, until golden brown and crispy.
  4. Prepare the Dip:
    • In a small bowl, mix the eggless mayonnaise, mustard paste, tomato ketchup, smoked paprika, and red chili powder until smooth.
  5. Serve:
    • Serve the patties hot with the dip on the side.
