- Boil the Potatoes: In a large pot of salted water, boil the potatoes until tender, about 15-20 minutes. Drain and let them cool slightly.
- Prepare the Mashed Potatoes: Peel the potatoes, mash them until smooth, and let them cool completely.
- Add Flavor to the Mash: Add the beaten eggs, salt, pepper, paprika, garlic powder, and chopped parsley to the mashed potatoes. Mix until well combined. Refrigerate the mixture for 30 minutes to make it easier to handle.
- Form the Balls: Take a tablespoon of the potato mixture, flatten it in your hand, place a cube of cheddar cheese in the center, and carefully close the mash around the cheese to form a ball. Repeat until all the potato mixture is used.
- Coat the Balls: Prepare three separate bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each potato ball first in the flour, then dip it in the beaten egg, and finally coat it with breadcrumbs. Ensure they are fully covered for a crispy finish.
- Fry the Potato Balls: In a medium frying pan, heat the oil to 180°C (350°F). Fry the balls in small batches for about 2-3 minutes or until they turn golden brown and crispy on the outside.
- Drain and Serve: Transfer the fried potato balls to a plate lined with paper towels to drain any excess oil. Serve them hot.
